Healthy Boot Camp Brownie Recipe

This is our boot camp brownie recipe that we have decided to share with you. It is gluten free, wheat free, diary free and sugar free.

For the base:

  • 250g Walnuts
  • 250g Peacans
  • 350g Dates, soaked if too dry
  • 150g Cocao Powder

For the Icing:

  • 450g Coconut Butter, melted
  • 150g Cacao Powder
  • 4 Tbsp Raw Honey/Manuka Honey
  • Pinch of salt

Directions:

  • Put the nuts into a food processor and wizz.
  • Remove stones from the dates and add one at a time to the processor.
  • Sprinkle the cacao powder into the mixture and pulse until well combined.
  • Transfer the mixture into a 20 cm tray, lines with foil or cling film.  Press down firmly with the back of a spoon.
  • Place in the fridge while preparing the icing.

For the icing:

  • Melt the Coconut oil over a pan of boiling water.
  • Mix all the icing ingredients, stirring thoroughly to remove any lumps.
  • Pour this over the brownie mixture and leave in the fridge for 30 minutes.
  • Once set, cut the brownie into squares.
